Ingredients:
- 2-3 ripe bananas
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup chopped nuts (optional)
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 4x8 inch loaf pan.
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Stir the baking soda into the mashed bananas and let it sit for 2 minutes.
- In a separate bowl, cream together the softened butter and sugar.
- Beat in the eggs and vanilla extract.
- Combine the banana mixture with the butter mixture.
- Sift the flour and salt into the wet mixture and mix until just incorporated.
- If desired, fold in the chopped nuts.
- Pour the batter into the greased loaf pan.
- Bake in the preheated oven for 60-65 minutes or until a toothpick inserted into the center comes out clean.
- Allow the banana bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
